3–4 lbs (1.5–2 kg) beef roast (chuck, shoulder, or brisket)
2 medium onions, sliced
4 medium carrots, chopped into chunks
2 celery stalks, diced
3 garlic cloves, minced
2 cups (500 ml) beef broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
1 tsp dried rosemary
Salt and black pepper to taste
2 tbsp olive oil
For the Gravy
2 cups (500 ml) strained cooking liquid
2 tbsp cornstarch
2 tbsp cold water
Methods:
Step 1: Prep and Sear the Roast
- Heat olive oil in a skillet over medium-high heat.
- Season the beef generously with salt and pepper.
- Sear the beef on all sides until golden brown, about 2–3 minutes per side.
Step 2: Assemble the Slow Cooker
- Place onions, carrots, celery, and garlic at the bottom of the slow cooker.
- Set the seared roast on top of the vegetables.
Step 3: Add Flavorful Liquids
- In a bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary.
- Pour the mixture over the beef and vegetables.
Step 4: Cook
Low Setting: 8–10 hours
High Setting: 4–5 hours
Step 5: Make the Gravy
- Remove the beef and vegetables, keeping them warm.
- Strain 2 cups of the cooking liquid into a saucepan.
- Mix cornstarch and cold water in a small bowl, then whisk into the liquid.
- Heat over medium, stirring until the gravy thickens, about 2–3 minutes.
Step 6: Serve
Slice or shred the beef, serve with vegetables, and drizzle with gravy.
