Mchadi (corn tortillas)

Served mchadi as a separate dish, cheese and butter, and instead of bread to any meat and vegetable dishes.
In the Georgian mothers have a touching custom of preparing their children corn cakes, called “Dedis heli”, which means “mother of hand”: on a round corn tortilla mother makes the imprint of his palm, and then bake the cake. The practice is quite ancient, and it symbolizes the farewell to the mother to the child – my mother is always with you! These cakes are usually given on a long journey.



corn grits finely ground 2 cups
water 1/2 cup

Cooking method:


Rinse corn grits, salt, and gradually add water, knead the dough. Water should be added in very small quantities, as corn grits it absorbs bad and there is a risk that the dough will be too runny. In a frying pan with a thick bottom to heat the vegetable oil, fry the tortillas on both sides until golden brown. Serve immediately with butter and cheese.
