Lobio of red beans




About the recipe:

Lobio – one of the most famous Georgian dishes. Prepare lobio red bean or green (needle) with spicy herbs and sprinkle the dish with pomegranate seeds. By the way, the word “lobio” in Georgian means “beans.”



red beans 500 grams
onions 2 heads
sunflower oil 4 Art. spoons
red wine vinegar 3 Art. spoons
coriander 50 grams
Peppers 1 piece
garlic 3 cloves
dried savory 2 hours. spoons
ground black pepper to taste
salt to taste



Beans soak in cold water for 12 hours. Then boil, remove from heat. The remaining broth is drained into a separate bowl.


Onions finely chop, fry in oil until golden brown, mix with beans.


Garlic crushed with salt, add the beans with savory, finely chopped cilantro and vinegar. A mixture of pepper and salt, if necessary.


Peppers cut into large pieces and add to the finished dish. If lobio turned too “dry”, you can add a little broth. Serve hot or cold lobio.
