In apples remove core with seeds and cut them into slices 0.5 cm thick.
Banana peel and cut into slices 2 cm thick.
Brandy or liqueur mixed with 1 tablespoon of sugar and lemon juice, add the apples and bananas, mix thoroughly and leave for 30 minutes.
Flour mixed with salt, remaining sugar, add egg yolks and milk and mix thoroughly, then beat with a wooden spoon. Beat egg whites to a white foam, connected to the accurately cooked dough and placed in a refrigerator for at least 30 minutes.
For deep-frying heat the olive oil. Each piece of fruit dipped in batter and fry in deep fat until golden brown, then remove with a slotted spoon and dry on a paper napkin. Before serving, sprinkle with cinnamon.
