Baked rakushnika


* Rakushnik – 2 kg of
tomatoes -. 3 pcs
onions – 2 heads of
garlic – 6 cloves of
green coriander and parsley, chopped – 1/2 cup
egg – 6 pcs.
Vegetable oil – 1/4 cup
olive oil – 1/4 cup
tomato paste – 1 tbsp. Spoon
lemon – 4 pcs.
black pepper -. 1/5 tsp
salt – to taste


Cooking method:

Rakushnik rinse thoroughly, fill with juice squeezed from lemon, cumin, salt, pepper and leave for 2 hours.
Garlic and onions finely chop together with greens, put oil, add chopped rakushnik and tomatoes, tomato paste and stew for 30 minutes, adding water if necessary.

Beat egg whites until white foam and mix with the yolks.

Braised rakushnik with vegetables put in a greased form, add a little of the egg mixture, stir and top with remaining egg mixture and bake in the oven for 10-15 minutes until golden brown. Serve hot.
